Kabosu is a Japanese citrus fruit that grows mainly in the Oita prefecture. A more sour agrum compared to yuzu that gives a nice freshness when used as a spice on grilled fish, sashimi or stew, mushrooms, in the preparation of ponzu sauces, pastries and ice cream. In cocktails this gives a surprising twist but can certainly also be drunk with soft drinks and beer.
