This sake is made with the blossoms of the Ginkgo flower, which allows us to experience an extraordinary style of savouriness and freshness.
The brewery, Naito Shuzo, brews all of their sake using underground water from the Kiso River, which is soft water making it perfect for making a smooth sake.
They also use white koji here, which allows them to obtain a smooth sake with the right acidity.
