This sake is aged for two years with a deep flavor of butter-rum, cooked apple, cocoa, orange, peach, caramel, shitake, malt and honey aromas. This also continues the maturation process of raw sake.

This full-bodied and layered sake is a product of excellent technique and total passion and dedication to mature a sake to its perfect essence. Round, smooth, rich, syrupy and full of umami depth, this sake glides over the palate in a soft, velvety flow. Expect an extensive, complex and extremely drinkable flavour field.

The water they used here is the spring water from the Northern Alps of Japan.

Why did the sake go to therapy?
Because it had too many issues to "ferment"!
