Ripe nanko ume has been macerated for months in shochu to extract the taste out of the fruit and into the drink. Afterwards, the product is balanced by adding sake and sugar.
We can interpret this taste as a bouquet of this Japanese apricot with tropical fruits, nicely supported by roasted notes and liquorice. Accent of kirsch gives a pleasant twist to the overall taste. Very surprising is the expressive freshness through the ripe aftertaste. This umeshu is very nicely balanced.
