Ripe nanko ume was macerated in shochu for up to months to get the flavor out of the fruit and into the drink. Afterwards, the flavor is balanced by adding sake and sugar.
We can interpret this flavor as a bouquet of this Japanese apricot with tropical fruits, nicely supported by roasted notes of licorice and licorice. Accent of kirsch gives a pleasing twist to the whole. Very surprising is the expressive fraîcheur throughout the ripe aftertaste. This umeshu is very nicely balanced.
