Ripe nanko ume was macerated in shochu for months to extract the flavour from the fruit and into the drink. Afterwards the flavour is balanced by adding sake and sugar.
We can interpret this taste as a bouquet of this Japanese apricot with tropical fruits, nicely supported by roasted notes of licorice and liquorice. Accent of kirsch gives a pleasant twist to the whole. Very surprising is the expressive freshness throughout the ripe aftertaste. This umeshu is very nicely balanced.
