This Junmai Ginjo is brewed with Yumesansui, a high-quality sake rice grown in Aichi Prefecture, and water from the Mikane Mountains. The use of Yumesansui makes this an elegant and fine saké with soft florality and accents of ripe fruit.
Located on the east side of the city of Nishio in Aichi Prefecture, Mikaneyama is rich in nature. It is a perfect flying place for the Asagimadara (pictured on the bottle), the only butterfly to cross the sea. The Asagimadara, which comes here in the fall as a stopover on its migration, flies from here to the distant islands of Kikai and Amami Oshima, Okinawa and Taiwan. This sake is brewed with such dreams and hopes in mind.
